Recipe no 4. Didier Drogba - Aloko


By special request - the recipe series has been extended to include club legends. Drogba rightfully holds that title and this is his offering as a quick snack. Can also be served as part of a main meal with the traditional addition of a grilled fish (barbequed would be even better in this case)

Serves 1

5 ripe plantain (peeled and cut into discs)

1 onion

200g chopped tomatoes

1 scotch bonnet chilli

25ml red palm oil (can be substituted if necessary)

salt, to taste

Instruction

Peel the plantain and then chop into discs, sprinkle with salt and set aside.

Chop the onion and chilli pepper finely and set aside.

Pour the oil into a large frying pan and place on a high flame until the oil is very hot.

Carefully drop the plantain discs into the oil and fry until they are golden brown.

Remove the plantains from the oil and drain on some kitchen paper.

Drain any excess oil then return the pan to the heat and brown the onions.

Add the chilli pepper and the tomatoes and stir regularly for a few minutes.

Plate up the plantains then pour the sauce on top. Enjoy your quick snack.

VERDICT

Something quick and easy from Didier and actually quite tasty. Fun food to maybe serve at a party with lots of plantain and the sauce on the side for dipping.
