Its the one we have all be waiting for - what does 'fat' Frank love to eat?
Frank is a big fan of Italian food and loves the opportunity to load up on carbs and protein. Take it away Frank.
Serves 2
2 medium chicken breasts, skinless and boneless
5 tbsp extra virgin olive oil, plus an extra dash for cooking the pasta
1 medium hot chilli, finely sliced
1 garlic clove, choppedhandful basil leaves
300g canned chopped tomatoes
200g/7oz fresh penne pasta
50g plain flour
1 handful of breadcrumbs
1 egg, beaten with salt and black pepper
salt, to taste
parmesan shavings to serve
Instructions
Place the chicken breasts between two sheets of cling film and beat with a meat mallet.
Flour the chicken, then dip each into the egg and then in the breadcrumbs making sure each piece is well coated.
Heat the olive oil in a frying pan and gently fry the chicken for c.2 minutes on each side, until they are golden and crisp.
Place the cooked chicken on some kitchen roll, allowing the excess oil to drain. Keep warm.
Add some more oil to the pan and heat. Add the chilli and garlic. After about a minute, add the basil and allow it to gently wilt.
Remove the garlic, basil and chilli from the pan and set aside. Add the chopped tomatoes to the pan.
Put the garlic, basil and chilli back in the pan with the tomatoes. Simmer for around 10 minutes, until the sauce has thickened a little. Add salt to taste.
Cook the pasta for a few minutes in large saucepan of boiling, salted water with a dash of olive oil. Drain the pasta and add the tomato sauce to it.
Serve the Chicken on a large plate alongside a steaming pile of Pasta. Cover with shredded Parmesan. Enjoy!
VERDICT
